Chelsea, pressing the water out of the tofu is the #1 most important thing you have to do when you’re cooking it yourself. It’s so absorbent that if you don’t press it really dry it gets squishy and soggy when it’s cooked. If you don’t have a press, put the tofu on a bunch of paper towels on a plate, top it with more paper towels and another plate, then stack heavy stuff on top of the top plate. I usually put like 3 cans of soup or a bunch of potatoes on top. You just want to weight it enough that the tofu is being gently squeezed so the water drains out. Sometimes I’ll leave it like that for 30 – 45 minutes before I start cooking to make sure the water is really out of it. It makes it easier to cut when it’s dry and it crisps up better when you’re cooking it. It’ll absorb the broth and seasonings later when you mix it back into the rice and sweet potato mix. 🙂
