A quick review of finances last weekend confirmed that I have to stop going out for workday lunches. I didn’t realize how much money I was spending going out to lunch during the workday. You just don’t really notice $5.00 here for a wrap or $10.00 there for a soup and salad. Total that up over a week and it’s easy to spend $50 – $100 a week on lunches! That’s absurd. My husband has also been on a real health kick lately, heavily cutting down on sugars, carbs, and other not-so-awesome stuff. I’ve stopped shopping at almost any store except for Sprouts. We also joined a health club (but I’ll tell you about that later). Sunday I spent the entire day prepping workday lunches for the week. One of those workday lunch favorites is a quinoa veggie goddess salad.
I’m actually all about veggie bowls, fruit bowls, and salads these days. My work days are long. My freelance work makes the days even longer. Then I have our home to manage and dogs to talk. Honestly, all I ever feel like I want to do is chop up a few things and eat. The less I have to actually cook the better, which is weird because once upon a time I loved to cook. I actually decided to take my dogs with me when I ran out to Sprouts to pick up groceries for the week (you can shop their Better For You Brand Sale deals here). I’m not really sure why I took the dogs along but I’ve been so go-go-go lately I haven’t really had time to play with them like I want to. Plus, they love car rides so I thought, “Why not? They can sit in the car while I shop.” It’s been much cooler than expected lately so I knew they wouldn’t overheat.
I was right, they loved it.
I almost always cook up a big batch of quinoa on Sunday. Once quinoa is cooked it is good for about a week so you can scoop it on to salads, in to soups, form it into patties, etc so cooking it once a week is a big help to me. This salad is one of my favorites. It’s veggie-full and loaded with quinoa (which you can’t see because it’s underneath the veggies) then topped with sunflower seeds, croutons, and Annie’s Goddess dressing. That dressing (one of my favorites) is very savory. I once made the mistake of drizzling it over a strawberry walnut quinoa salad. That was a mistake. Oops!
Remember…I cook a big batch of quinoa on Sunday so when I tell you to use cooked quinoa, that’s where it came from. #TheMoreYouKnow
- Spring mix lettuce
- 1/3 cup cooked quinoa (I use red or tri-color variety)
- 1/2 green bell pepper, sliced
- 1 medium carrot, sliced
- 3 sweet yellow peppers, sliced
- 1/2 tomato, chopped
- 1 tsp sunflower seeds, shelled
- 1 tbsp Annie's Goddess salad dressing
- seasoned croutons, if desired
- Fill bowl with spring mix lettuce.
- Top with cooked quinoa
- Add vegetables
- Sprinkle with sunflower seeds
- Drizzle with Annie's Goddess dressing
- Add croutons
